Unique maroon-colored pods that, as their name suggests, can grow up to one yard long! Average pod sizes hover around a still impressive 16 – 20” and are as slender as a pencil. The lovely green vines with their maroon pods are made even more attractive by their little white flowers.  Young pods are sweet with an intense flavor. Older pods can be shelled and dried. Plants produce heavily with up to four beans in a cluster.

Planting: Sow seeds 1” deep and space 2-4” apart. If planting multiple rows, space your rows 4’ apart.

For Ground Plot Planting: Plant seeds 6” apart in rows spaced 18-24” apart. Seed pack will cover a 25’ row.

For Raised Bed Planting: Plant seeds 6-8” apart. Packet will cover 15 sq. ft.

Care: Water well, because although these beans can be drought tolerant, prolonged dryness will cause the pods tobecome tough and stunt their growth.

Harvest: Pick beans regularly to encourage new pod set.

Special Instructions/Tips: Grow these beans on a trellis or large mesh fencing, so that their vines can climb up, up, up!

• This beautiful, deep red bean originated in Southern Asia and is still used today in many Asian stir-fries and salads.

• Delicious in cold salads as well as stir-fries and soups.

• A great source of folate, which is important for prenatal health and high vitamin A, which is important for eye health.

Crispy Baked Parmesan Yardlong Red Noodle Beans

4 cups Yardlong Red Noodle Beans, trimmed into 3-4 inch long pieces
¼ cup Parmesan cheese, grated
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper

Directions: Preheat oven to 425 degrees. Line a baking sheet with foil, and spray with non-stick cooking spray. Place Yardlong Red Noodle Beans on prepared baking pan, making sure they are evenly spread out, and none are laying on top of each other, (this will ensure even crispiness). Sprinkle seasonings and parmesan cheese evenly over green beans. Place green beans in the pre-heated oven and bake for 10-15 minutes, or until golden brown and crispy. (To make them extra crispy, I like to broil them for an extra 1-2 minutes before pulling them out of the oven). Enjoy immediately.
