Hyacinth Bean – Ruby Moon Seeds

The unofficial mascot of the Beanstalk Garden, this Hyacinth bean is a vigorous vining plant that produces beautiful deep purple bean pods, lovely lilac colored flowers, gorgeous ruby vines, and dark green foliage which also has hints of purple in it. These vines can grow up to 10-20’ high, so support is needed. The flowers are the best-tasting part of the plant, as they have a crunchy, beany flavor.

NOTE: The bean pods are inedible for this product.

Planting: Sow seeds 1” deep 8” apart along fence line or trellis. When seedlings develops true leaves, thin to 12 inches apart.

Care: Train and guide vines by tucking or trimming them back so that they don’t get overgrown. Pull out any dead and brown leaves as plant grows.

Harvest: Flowers and pods can be harvested to make a unique and pretty bouquets. The flowers as well as bean pods are also edible. However, mature seeds must be boiled before eating as they contain a trypsin inhibitor that is broken down by heat as well as a cyanogenic glucoside that is leached out by the cooking water. Could be toxic if eaten raw.

Special Instructions/Tips: Provide a trellis, fence line, porch column or other vertical structure for vines to grow and thrive.

Preferences: Plenty of water, full sun, well-draining soil

• Practically all parts of the plant are edible, although the seeds are slightly toxic and need to be cooked well in two washes of water before they should be considered edible.
