This Rainbow carrot blend is fun to grow and even more fun to harvest.  When you dig up this carrot patch you will find vibrant red, purple, yellow, orange and white carrots hiding below their green tops. These carrots make and fun and delicious snack for young gardeners!

When To Plant in Spring:

Planting: Sow seeds ¼ inch deep, thin to about 2 – 3 inches between each plant. Leave 12 – 14 inches between rows if planting multiple rows.

For Ground Plot Planting: Plant in rows spaced 18” apart. Thin plants to stand 1” apart. Packet will cover 130’ row.

For Raised Bed Planting: Thin plants to stand 2 – 4” apart. Packet will cover 25 – 90 sq. ft.

Care: Work in plenty of composted organic matter to your soil to maintain loose soil conditions and in order to encourage uniform root growth.

Harvest: Make carrots easier to unearth by sprinkling water on the soil to make it moist. Pull carrots out by their tops using a gentle twisting In areas with colder winter seasons, carrots can be kept in the ground after first frost, but should be harvested before the ground completely freezes.

Special Instructions/Tips: When storing your carrots, snip off the foliage to extend storage time.

• The first domesticated carrots are believed to have originated in 10th century Persia.

• Did you know that the original colors of domestic carrots were actually purple and yellow? Red, white, and orange carrots weren’t developed until later.

• The orange color of the familiar orange carrot is very high in beta-carotene which we humans convert to Vitamin A in our bodies. The cool thing about rainbow carrots is that their beautiful colors mean they contain many different kinds of vitamins and phytonutrients!

• Purple carrots are a great source of Anthocyanin, a flavonoid also found in blueberries that is known to increase antioxidants capacity in the blood as well as promote healthy brain function.

• Red carrots contain lycopene also found in tomatoes. Lycopene is known to lower the risk of certain types of cancer.

• Yellow carrots get their hue from lutein, which are linked eye health.

• White carrots’ health benefits don’t come from its color but from its high fiber content which promotes healthy digestion.

Rainbow Carrot Raisin Salad

4 Rainbow carrots, grated
2 apples, grated
1 stalk celery, chopped fine
1 tablespoon lemon juice
½ cup raisins
½ cup vanilla yogurt
½ cup chopped walnuts

Directions: Combine all the ingredients in a bowl. Serve.
